Holidays are the times I really do miss my family since they've moved out of state. Keep reminding myself that this time two weeks from now, I'll be seeing them all.
Nin and I are having a very non traditional Easter dinner tonight -- Thai food. We went to Cost Plus yesterday to get a single bottle of Torani Raspberry Syrup (for Raz Mojitos), and came out with an overflowing cartload of stuff. A blog friend of mine, on Friday, had been talking about a brand of Thai seasoning she'd just bought and how it tasted as good as what she ate out. Lo and behold, they had it as CP. Now, I have very little experience with Thai, and have never had Pad Thai, but that's what we're having tonight! Along with Miso Soup and Sake. I was also able to get two kick ass canisters for my flour and sugar -- on clearance no less! I've needed decent ones since we moved in here, and these will most definitely keep my sugar from crusting up and clumping in the damp! And they're huge! Which means being able to keep a full bag in the canister. Yes, anything to do with my kitchen and cooking fills me with glee! You should see me fondle my one good knife! You should see the Amazon Wishlist I keep just for house and home type stuff.
So yes, we were at Cost Plus, and got Thai stuff, Miso, Udon Noodles, a case of mixed wine since they had an awesome sale on, and I was able to finish off my Japanese tableware set. I now have a four place setting, as opposed to two. Then we went to Tarjay aka Target, so Nin could get storage containers. Wait for it .... she's actually cleaning her room!!! You can now see the floor!! Celebration! So I think she deserved the three margaritas, and the chocolate chip cookies I made her [g]

Date: 2007-04-09 04:46 am (UTC)From:I have a recipe book that I highly recommend because the author describes the ingredients needed for Thai and Vietnamese cooking and writes the recipes with ingredients that are fairly easy to obtain. She has a Vietnamese dipping sauce that I tried that was DELICIOUS. I had to settle for serrano peppers instead of Thai because my local grocers didnt have the Thai ones...but it had just the right amount of kick to it.
2 small cloves garlic, sliced
1 tsp ground chili paste (I think Taste of Thai has the red chili paste...VERY useful!)
1 fresh Thai bird chili, chopped (optional)
1/4 cup fish sauce
2/3 cup hot water
2 tblspns fresh lime juice
1/4 cup sugar
2 tablespoons shredded carrots or garnish
Place garlic , chili paste, and chili in a mortar. With pestle, pound into a paste - or finely mince. Combine with rest of ingredients, stir until sugar is dissolved. Float the carrots on top.
I didnt use carrots for mine, but did use some leaves of lemongrass from my garden. I also added a couple of slices of ginger. All in all it was very delicious. Wish I could eat like that all the time!! LOL
Ive only tried one other of her recipes, but it didnt turn out well - but I blame myself for that because I dont have a wok and my gas stove doesnt heat up quite as hot as one needs for a wok. I tried the lemongrass beef - it was a pretty good flavor but I got impatient with it and it wasnt quite as good as it should have been.
I love Thai because of the contrasts all the seaonings have : cold with hot, sour with sweet, tart with mild, piquant with soft. Its where I dont even like Chinese that much because Chinese now all tastes the same and there isnt the surprise to the taste buds that Thai food has.
