Well... they never actually die, they still have regular respiration and a heart beat, and Natalie made it pretty clear that FK vampirism was caused by a retrovirus (which should have no effect on something truly dead).
So from that perspective, they're not really undead.
But I know Vachon refers to them as such (see icon), and am pretty sure Nick does as well at some point. And it's such a common term to use to describe vampires that it's almost easier to think of them that way. (once a slacker Vaq, always a slacker Vaq ;) )
