Methos and Joe Dawson join forces when past indiscretions threaten their lives-- and loved ones-- in the present. Walker doesn't strike me as bloodthirsty. He seems to be one in a long line of Immortals who thinks it's fine to dispose of mortals without mercy, but doesn't go out of his way to pick fights with Immortals. He only comes after Methos because of their history.

Yeah, I'd guess they had a "live and let live" relationship before Methos slept with Charlotte.

We don't really know how many Immortals there are, but I'd guess that whenever Methos made his way to a new town, there's always be one or two, and he'd have to quickly suss out whether they were the bloodthirsty type. I doubt he'd stick around if they were.
