But hypothetically, if I were to write that Amanda/House fic, and I wanted to watch a handful of the more lighthearted Amanda eps to get her 'voice' right, which would you recommend? I have S2 and up available.

And I need to see if my S1 House DVDs have been returned yet. They've been out on almost constant loan since I got them!

I would have to agree with mischief5 about all her picks. If I had to pick my fave three, I'd go with:
